Sauternes is a wine made in the Graves region of Bordeaux out of Semillon (mainly) although also Sauvignon Blanc and Muscadelle grapes. The grapes are affected by noble rot (Botrytis cinerea) a fungal infection which takes the water out of the grapes and concentrates the flavours. Sauternes is sweet yet balanced by high acidity.
